Mcalls Buttercream II

Ingredients

  • Step 1:
  • 450 grams sugar
  • 150 grams water
  • Step 2:
  • 150 grams egg whites, at room temperature
  • Step 3:
  • 300 grams butter
  • Step 4:
  • 550 grams white margarine or shoretening
  • 10 grams vanilla

Preparation

Step 1

Cut step 3 (butter) into small pieces (1x1) and cool til required.

Place white into a large mixer bowl. Place STep 1 into a saucepan and bring to a rolling boil, let temperature reach 240 degrees. Let the syrup cool for 1 minute.

Beat egg whites until stiff, adjust mixer to medium and slowly add the hot syrup. Do not add the syrup quickly. Continue to mix until the bottom of the bowl does not feel hot to the touch (15 minutes). Once the miture has cooled, add step 3 a little at a time and continue to mix until the mix lumps are gone. Add in step 4 and continue to mix until it comes together.
