Marinated Bocconcini

Ingredients

  • 1 bunch broccoli
  • 1/2 ½ cup oil
  • 6 tbs. vinegar
  • 3/4 ¾ tsp. salt
  • 1/4 ¼ tsp. pepper
  • 1/2 ½ tsp. tarragon
  • 1/2 ½ tsp. thyme
  • 1/2 ½ tsp. dry mustard
  • 1/3 cup sliced green onions
  • 1/2 ½ cup slivered almonds
  • Tomato wedges

Preparation

Step 1

Cut the florets from the stems of the broccoli. Slice stems on the diagonal. Stem 3 – 5 minutes until tender. Combine the other ingredients except for the almonds and tomatoes. Add the hot broccoli and toss to mix. Chill 4 hours. Lift broccoli from the marinade and arrange on a serving dish. Garnish with almonds and tomato wedges.
