BAKED POTATO SOUP

Ingredients

  • 4 Large Baking Potatoes, Baked
  • 12 Slices Bacon, Cooked, Cooled, and Crumbled (or Ham)
  • 2/3 C Butter
  • 2/3 C Flour
  • 1 1/4 C Shredded Cheddar Cheese
  • 6 C Milk (2%is Better, Skim if OK)
  • 8 oz. Sour Cream
  • 3/4 tsp. Salt
  • 1/2 tsp. thyme
  • 1/2 tsp. White Pepper
  • 4 Green Onions, chopped
  • Grated carrots and parsley for garnish

Preparation

Step 1

Cut Cooled potatoes into wedges and then into pieces. Melt butter, add flour and milk gradually, stirring until thick. Add potates, salt, onion, pepper, bacon and cheese. Heat thoroughly. Add more milk if needed for consistency. Add sour cream and thyme. Garnish with parsley and carrots. Watch for scorching.
