Peppers Stuffed with Meat and Cheese

Ingredients

  • 3 yellow bell peppers
  • 1/2 ½ onion
  • Olive oil
  • 12 ounces ground beef
  • 3 ounces ricotta cheese
  • 1 egg
  • 1/4 ¼ cup Parmesan
  • Salt and pepper
  • Asiago cheese

Preparation

Step 1

Clean the peppers, removing the stalk, internal ribs, and seeds, then cut them in half lengthwise. Chop the onion, and heat in a skillet, in a tablespoon of olive oil, until soft. Mix in the ground beef, the ricotta, the egg, the Parmesan, salt, and pepper.
Using a spoon fill the pepper halves with the meat mixture. Bake at 350 for 20 minutes. Remove from the oven. Top each pepper with a pinch of grated Asiago cheese. Return to the oven for a few minutes, until the cheese has melted.
