Ingredients

  • GLUTEN FREE FLOUR MIX FOR WAFFLES*

  • 1

    cup brown rice flour

  • 1

    cup white rice flour

  • 1/4

    cup potato starch

  • 1/4

    cup potato flour

  • 1/2

    cup tapioca starch

  • WAFFLE INGREDIENTS

  • 2

    cups gluten free flour mix (see above) *

  • 1/2

    tsp salt

  • 3

    tsp baking powder

  • 1 1/2

    cups milk, (plus some if needed)

  • 2

    eggs

  • 4

    Tbsp oil

Directions

Combine dry ingredients with a whisk. In a separate bowl mix together the milk, eggs and oil. Stir the wet ingredients into the dry ingredients and mix together. Add additional milk, if needed. You want the batter to be a little thicker than pancake batter. Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 - 5 minutes, depending on your iron. Serve immediately or freeze and later put in microwave for approx. 40 sec. on each side, or in the toaster.
