Holiday Honey Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup sour cream
  • 1 cup honey
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 tablespoons sliced almonds

Preparation

Step 1

Preheat oven to 350 degrees. Coat two 9x5-inch loaf pans with cooking spray.

In large bowl, combine all ingredients except almonds; beat until well blended then pour batter equally into prepared loaf pans and sprinkle equally with almonds (see Note).

Bake 45 to 55 minutes, or until toothpick inserted in center comes out clean. Allow to cool 10 minutes then remove to wire racks to cool completely.

Note:
It helps almonds stay on top of cakes if you sprinkle them on halfway through baking, rather than at the beginning.
