Ingredients
- 1 cup oil
- 1 chicken, boneless, cut up and dredges in flour
- 1 1/2 1 ½ lbs. smoked sausage
- 1 cup flour
- 1 tbsp. chopped garlic
- 8 cups stock
- 2 cups chopped green onions
- Cooked rice
- 4 cups chopped onions
- 2 cups chopped celery
- 2 cups chopped green pepper
Preparation
Step 1
Season and brown the chicken in oil. Add the sausage and sauté with the chicken. Remove both from the pot.
Make a roux with equal parts of oil and flour to desired color. Add the onions, celery, and green pepper. Add garlic to the mixture and stir continuously. After the vegetables reach the desired tenderness, return the chicken ad sausage to the pot and cook with the vegetables, stirring frequently. Gradually stir in liquid and bring to a boil. Reduce heat to a simmer and cook for an hour or more. Season to taste.
About 10 minutes before serving, add green onions. Serve gumbo over rice or without rice.
