Ingredients
- 2 ½ cups flour
- ¾ cup sugar
- 2 tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- Zest of 1 lemon
- 1 egg, lightly beaten
- ¾ cup buttermilk
- 2/3 cup canola oil
- 1 ½ tsp. vanilla
- 1 ½ cups frozen or fresh blueberries
Preparation
Step 1
Preheat oven to 375 degrees. Combine the egg, milk, oil, and vanilla. In another bowl, combine the flour, sugar, baking powder, baking soda, salt, and zest. Gently fold in the berries. With a large spatula fold wet ingredients into the dry ingredients and stir only until they are combined. Do not overmix.
Fill the muffin cups 2/3 full and bake 20 minutes. Cool for 5 minutes before removing from muffin pans.
