Sauteed Brussel Sprout Slivers with Orange & Caraway

Ingredients
- 10 ounces (1 pint) brussel sprouts
- 1 orange
- 1 T lemon juice
- 1 t honey
- 1/8 t salt
- pinch of red pepper
- 1/2 t caraway seeds
- 2 scallions
- 1 T peanut oil

Step 1
Trim sprouts, stack in tube of food processor on slicing blade and press down firmly to cut into thick slices.
Place in bowl of lukewarm water cover with weight to submerge.
Pare a few strip of zest from orange. Squeeze 1/3 cup orange juice in a bowl. Add lemon juice, honey, salt and pepper and mix. Toast caraway seeds in skillet over low heat, stir until crackling. Chop seeds. Trim scallions and slice thin. Drain sprout.
Heat oil in skillet add zest and scallion, than add sprouts. Toss over high heat until wilted ~ 2 minutes. Add juice mixture and toss until leaves are tender and juice has evaportated ~ 4 minutes. Reduce heat. Add scallion greens and caraway seeds, toss.
