Ingredients
- TOPPING:
- 2 cups sugar
- 2 cups flour
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 cup oil
- 4 eggs
- 1 tsp. vanilla
- 3 cups grated carrots
- 1 8 oz. can crushed pineapple
- 1 box powdered sugar
- 1 large cream cheese
- 1 cup pecans
- 1 stick butter
- 1 tsp. vanilla
Preparation
Step 1
Sift dry ingredients into a bowl; add oil and eggs 1 at a time; then vanilla, carrots, and pineapple. Bat at 325 for 50 minutes. Cool. Mix topping and pour over cake.
