Ingredients
- 2 medium potatoes
- 2-3 slices bacon
- 1/3 cup onion, chopped
- 1 tablespoon flour
- 2-3 teaspoon sugar
- 1/4 teaspoon celery seed
- dash of pepper
- 1/3 cup water
- 3 tablespoons white wine vinegar
Preparation
Step 1
Bake or boil potatoes in their jackets.
Cool. Peel and slice thinly.
Fry bacon slowly in skillet; drain on absorbent paper and crumble.
Saute onion in bacon fat until golden brown.
Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat.
Stir in water and vinegar. Bring to boil, stirring constantly. Boil 1 minute. Stir potatoes and bacon in carefully. Remove from heat; cover and let stand until ready to serve.
