Garlic Shrimp with Chili Sauce

  • 1 lb head-on large shrimp
  • Sea salt to taste
  • 1 tablespoon olive oil
  • 3 cloves garlic, peeled and chopped
  • 4 tablespoons sweet chili sauce
  • 1 tablespoon ketchup
  • Chopped green onions

Trim tendrils off shrimp with scissors and then rinse under cold running water. Drain, pat dry with paper towels and then season with salt. Set aside.

Heat oil in a skillet over medium high heat. Add the garlic and quickly stir-fry for 20 seconds.

Add the shrimp and cook, stirring, for 2-3 minutes or until shrimp turns pink.

In a small bowl, combine sweet chili sauce and ketchup. Add the sauce to the pan; cook for a minute, stirring until shrimp is completely covered with the sauce. Make sure not to overcook the shrimp. Sprinkle with green onions.
