ITALIAN SHRIMP SALAD

Ingredients

  • 2 lbs shrimp (cooked, peeled, deveined, cooled)
  • 1 medium celery
  • 1 red onion
  • 4 or 5 cloves of garlic
  • 1 T oregano
  • 1/4 C olive oil
  • 1 T basil
  • 3 T wine vinegar
  • Juice of one large lemon
  • salt and pepper

Preparation

Step 1

Put shrimp in a medium sized mixing bowl. Cut celery and onion into 1/4" pieces. Crush garlic. Add to shrimp.
Mix thoroughly. Combine oil, vinegar, lemon juice and spices. Pour over shrimp mixture and mix well.
