Ingredients

  • 2 md. spanish onions,sliced
  • 1 md. red onion, sliced
  • 1 bunch scallions, sliced
  • 3 shallots, sliced
  • 1 T. olive oil
  • 2 cans beef broth
  • 1/2 c. white wine
  • 1 tsp. worcestshire sauce
  • 6 slices of french bread cut 1" thick
  • 3 oz. reduced fat jarlesberg cheese
  • 2 tsp. parsley

Preparation

Step 1

1) in md sauce pan prayed with pam, place all onions. drizzle with olive oil, toss lightly

2) cook over md. heat, stir frequently til onions softened, about 30 minutes

3) add broth, wine and worcestshire; bring to a boil and reduce heat to low, simmer for 15 minutes.

4) preheat broiler; divide soup into 6 oven proof bowls, top with slice of bread and cheese
broil 6" from heat 3-5 minutes or til cheese melts.

5) sprinkle with parsley
