Skewer Sundae

Ingredients

  • 1 banana, sliced
  • 12 strawberries, cut in half
  • 12 chunks fresh pineapple
  • 8 scoops French vanilla ice cream
  • 2 tbs. butter
  • 2 tbs. sugar
  • ½ cup orange juice
  • Grated rind of 1 lemon
  • Grated rind of 1 orange

Preparation

Step 1

Alternate fruit on short wooden skewers; divide ice cream scoops between four sundae dishes and set skewers on top; chill.

Heat butter in frying pan. Stir in sugar and cook until golden brown; mix constantly.
Add orange juice and rinds; continue cooking to reduce by half. Cool slightly then pour over the kebabs and serve.
