Ingredients

  • 8 ounces chopped lobster meat
  • 2 Tbsp reduced fat mayo
  • 2 Tbsp minced celery
  • 2 tsp minced fresh chives
  • 1/2 tsp lemon zest
  • 2 tsp fresh lemon juice
  • 1/8 tsp salt
  • Pinch ground pepper
  • 4 whole wheat hot dog buns
  • Butter flavored cooking spray
  • 8 Bibb lettuce leaves
  • 2 Roma tomatoes, thinly sliced

Preparation

Step 1

Combine first 8 ingredients in a medium. Cover and chill until ready to serve.
Heat a large nonstick skillet over medium heat. Spray the inside of the buns with cooking spray and cook in skillet 1-2 minutes until golden brown.
Layer buns with lettuce, tomatoes and lobster mix.
