Apple Cake

  • 3 c flour
  • 3 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c unsalted butter, softened
  • 1/4 c vegetable oil
  • 2 c sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 3 large apples, peeled and cut into 1/2 inch dice
  • 1 T turbinado sugar (Sugar in the Raw)
  • 1 c 10x sugar
  • 5 tsp milk



Step 1

1. Heat oven to 350. Grease 10 in tube pan, dust lightly with flour
2. Whisk together flour, 2 tsp cinnamon, baking soda, and salt โ€“ set aside
3. In electric mixer, cream butte, oil, sugar and vanilla until light and fluffy. About 2 min. Add eggs one at a time, beating well after each addition. Working in two batches, incorporate dry ingredients into butter mixture โ€“ fold in apples
4. Spoon batter into prepared pan. Combine remaining 1 tsp cinnamon and sugar and sprinkle over cake. Bake until top is golden about 70 min.
5. Allow cake to cool in pan for 15 min before transferring to a plate right side up; allow to cool completely. Whisk 10x sugar and milk for icing and drizzle over cake.
