Ingredients
- 3 cans cannellini beans rinsed and drained
- 1 can diced tomatoes
- 4 cups water
- 1 lg. onion chopped
- 2 Tbs. minced garlic
- 2 tsp. It. seasoning
- salt and pepper to taste
- 1/2 bulb fennel chopped (or 4 cups chopped celery)
- 1/2 sm butternut squash peeled and cut into 1/2in. pieces (or 4 med. carrots chopped)
- 1 med. zucchini halved lengthwise and sliced
- 8 oz. broccoli florets
- 1 cup frozen peas

Preparation
Step 1
(1) Puree beans, tomatoes, and water. Pour into a lg. pot and add onion, garlic, and seasonings. Simmer covered 10 min. (2) Add remaining veg. and simmer covered for 20 min. or until tender. Check for taste.
