Ingredients
- 2 T olive oil
- 4 scallions, sliced
- 1/2 tsp salt
- 1/2 tsp black pepper, divided
- 1 T chopped garlic
- 1 red pepper, diced
- 1 yellow pepper, diced
- 2 c chopped broccoli
- 5 english muffins, toasted and torn into pieces
- 1 c grated Monterey jack
- 1 c grated cheddar, divided
- 9 eggs
- 2 1/2 c whole milk
- 2 T Dijon mustard

Preparation
Step 1
1. In large skillet, heat oil. Add scallions, salt, ¼ tsp pepper. Cook for 3 min. add garlic, bell peppers, broccoli and cook for 7 minutes.
2. Coat 9x13 pan with cooking spray. Line with muffins; top with vegetable mixture, Monterey jack, and ½ c cheddar.
3. Whisk eggs, milk, and mustard. Add ¼ tsp pepper. Pour eggs over mixture, cover with foil and refrigerate for 4 hours or overnight.
4. Preheat oven to 350. Bake strata covered for 30 min. Remove foil and sprinkle with ½ c cheddar. Bake for 25 minutes more or until golden brown and set in center. Cool for 10 min.
