Lemon Chicken w/snow peas

Ingredients

  • Snow peas
  • 2 eggs
  • 1/4 c parmesan cheese
  • 1/4 c chopped parsley
  • 1/2 c chicken broth
  • 1/4 c lemon juice
  • 1/2 tsp salt
  • 1/4 tsp.pepper
  • 4 chicken breasts, pounded to 1/4 inch thickness
  • 1/4 c flour
  • 2 garlic cloves, chopped
  • 2 T olive oil
  • 3 T butter
  • 1 lemon, cut into wedges

Preparation

Step 1

1. Combine beaten eggs, 1/4c broth, 2 T lemon juice, salt and pepper. Coat chicken in flour, then dip into egg mixture
2. sauté garlic in oil for 30 seconds. Add chicken and sauté until cooked. Remove to plate
3. In same skillet, melt butter. Stir in ¼ c broth and 2 T juice. Bring to boil, cook 30 seconds. Pour over chicken; serve with snow peas. Garnish with lemon and parsley.
