Berry Filled Lemon Cake

Ingredients

  • 1 1/4 cp water
  • 3/4 cp egg substitute
  • 1/4 cp plain fat-free yogurt
  • 1 tbsp grated lemon peel
  • 1 pkg light yellow cake mix
  • 1/2 cp powdered sugar
  • 3 tsp lemon juice
  • 2 cps sliced strawberries

Preparation

Step 1

In large bowl, beat the water, egg substitute, yogurt and lemon peel, beat in cake mix. Beat on medium speed for 2 minutes.

Pour into a greased and floured 10 inch fluted tube pan. Bake at 350 degrees for 40-50 minutes. Cool for 10 minutes.

Combine powdered sugar and lemon juice, drizzle over cake. Fill the center with strawberries.
