Ingredients
- JERK SEASONING:
- 6 boneless, skinless, chicken breasts (6 oz each)
- 1 t sugar
- 1 t allspice
- 2 1/2 t thyme flakes
- 1/4 t cayenne pepper
- 1/2 t salt
- 1/2 t pepper
- 2 T apple cider vinegar
- 2 T olive oil
- RELISH:
- 1 small red onion (diced)
- 1 small cucumber (peeled and diced)
- 1 t sugar
- 2 T apple cider vinegar

Preparation
Step 1
Combine jerk seasonings together and rub over chicken. Marinate 2 hours. Combine all relish ingredients and refrigerate. Heat grill to medium-high or oven to 375 degrees. Grill chicken 6 minutes each side or bake 25 minutes. Top with relish and serve with white or brown rice.
