HORSERADISH MUSTARD

Ingredients

  • 3/4 cup half and half, divided
  • 1 egg yolk beaten
  • 1/3 cup sugar
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 3 tablespoons creole mustard
  • 1/4 cup white wine vinegar
  • 1 tablespoon prepared horseradish

Preparation

Step 1

Scald 1/4 cup half and half in a small saucepan. Set aside. Combine egg yolk, 1/2 cup half and half, sugar, flour and mustard. Gradually add to scalded half and half, cover over low heat, stirring constantly, 10 minutes or until thickened. Stir in vinegar and horseradish. Store in refrigerator. Makes 1-1/3 cups.
