Ingredients
- 1 tbs. chopped fresh parsley
- 1 tsp. grated lemon zest
- Juice of 2 lemons
- ½ cup olive oil
- 2 tbs. soy sauce
- 2 tbs. honey
- 2 tbs. Cajun seasonings
- 1 tbs. chopped fresh parsley
- ¼ tsp. ground red pepper
- 2 lbs. large shrimp, peeled and de-veined
Preparation
Step 1
Mix together parsley and zest. Cover until rady to use.
Combine the lemon juice, oil, soy sauce, honey, seasonings, and parsley. Add the shrimp.
Toss well with dressing, cover and marinade in the refrigerator for 1 hour, stirring constantly. Preheat oven to 450 degrees. Transfer the shrimp to a baking pan large enough to hold them in one layer. Bake shrimp until firm 8 – 10 minutes. Sprinkle the shrimp with the reserves zest/parsley mixture.
