Ingredients
- 3 1/2 Lb peeled carrots
- 1 1/2 C sugar
- 1 T baking powder
- 1 T vanilla
- 1/4 C flour
- 6 Eggs
- 1/2 Lb butter
- Powdered sugar

Preparation
Step 1
Steam or boil carrots til extra soft. Drain well. While carrots are still warm, add sugar, baking powder, vanilla. Whip with mixer til smooth. Add flour & mix well. Whip eggs & add to flour mixture blend well. Add softened butter to mixture & blend well. Pour mix into baking dish about half full - souffle' will rise. Bake 350 about 1 hr or til top light golden brown. Sprinkle lightly w/ powdered sugar over top before serving. Sprinkle through sifter.
