Ingredients
- 9 inch baked pie shell
- 2/3 cup sugar
- 1/2 cup flour
- 1/2 tsp salt
- 2 cups milk
- 3 egg yolks
- 2 Tbsp butter
- 2 tsp vanilla
- 2 ripe bananas
Preparation
Step 1
In top of double boiler combine sugar, flour and salt.
Stir in milk and cook over--not in-- boiling water 10 minutes or until mixture thickens.
Remove from heat.
Beat egg yolks slightly.
Stirring well, pour half of hot mixture into eggs.
When smooth, return eggs to rest of hot mixture and cook until thickened.
Remove from heat and add butter and vanilla.
Cool slightly.
Slice bananas thinly.
Place them in the baked pie shell.
Pour cream mixture over bananas.
Whip cream with sugar.
Cover pie with whipped cream.
