  • 1 TB canola oil
  • 2 tsp curry powder
  • 1/2 tsp salt
  • Pinch cayenne

Step 1

Preheat the oven to 450 F. Halve the potatoes and cut each piece lengthwise into quarters. Toss with the oil, curry powder, salt, and cayenne in a large bowl.

Arrange the potatoes in a single layer on a large nonstick baking sheet. Bake turning once, until browned and crisp, 35 - 40 minutes.
