Ingredients
- Blend in:
- 2 cups potato chunks
- 3 ½ cups cauliflowerets
- 1 cup carrot, chopped
- 3 cloves garlic
- 1 cup onion, chopped
- 1 ½ tsp salt
- 4 cups water or stock
- 1 ½ cup grated cheddar cheese
- ¾ cup milk
- ¼ tsp dill week
- ¼ tsp ground caraway seeds
- ¼ tsp dry mustard
- Black pepper

Preparation
Step 1
Place first 7 ingredients (2 cups of cauliflower) in pot. Bring to boil, cover and simmer for 15 min.; let cool 10 min.
Puree the entire mixture in blender until smooth and creamy. Transfer into double boiler and whisk in ingredients under ‘blend in’.
Steam 1 ½ cups more cauliflower; add to soup. Just before serving whisk in ¾ cup buttermilk
