Almond Pound Cake
- 4 cups cake flour
- 1 3/4 tsp baking powder
- 3/4 tsp regular salt
- 4 sticks margarine at room temp
- 3 cups superfine sugar
- 8 eggs
- 3/4 cup whole milk or nondairy creamer
- 2 tsp almond extract9if don't like almond extract omit, add another 1/2 tsp vanilla extract
- 1/2 tsp vanilla extract
preheat oven to 350 line 3 loaf pans with parch paper and lightly grease with cooking spray.
In a medium bowl,whisk together flour,baking powder and salt.
In a mixer beat marg. until light and fluffy and then add the sugar on low speed until smooth,about 3 min. Increase the speed to medium and add eggs one at a time beating until blended and scraping the bowl throughout the process.
In a small bowl'mix the milk,extract and vanilla together. Reduce speed of the mixer to low and alternately add the flour mixture and milk mixture to the creamed marg mixture,beginning and ending with the flour mixture.Mix until blended,don't over mix.
Divide the batter equally among the three pans and bake until toothpick comes out clean about 30 min. Let cool about 10 min. Take out of pans and cool completely.
