Ingredients
- In a mixing bowl, whisk together 2 eggs, 2 tbsp. water, 1/8 tsp. salt, dash pepper per omelet
Preparation
Step 1
Heat to very hot a nonstick 8" or 10" skillet with sloping sides; add 1 tbsp. butter and quickly put in egg mixture
Tilt pan; with inverted plastic spatula, move cooked egg so uncooked can reach hot surface. Don't overcook
Imagine a vertical line dividing the skillet in half. Springle filling of choice over left side of omelet
Holding the skillet so that the handle is directly in front of you slip the spatula all the way underneath the right side of the omelet and fold it over the left side
With skillet held in your right hand and a plate at an angle in your left, flip or slide the omelet onto the plate. The omelet is served "upside down" so even if you didn't fold it perfectly, no one will know
