Ingredients

  • 1 C unsifted all purpose flour
  • 1 C quick rolled oats
  • 2 T finely chopped toasted walnuts
  • 1 t ground cinnamon
  • 1/2 t baking soda
  • 1/4 t baking powder
  • 1/4 t salt
  • 3/4 C firmly packed light brown sugar
  • 2 Large egg whites
  • 2 T veggie oil
  • 2 T apple butter or prune puree
  • 1 t vanilla

Preparation

Step 1

Heat oven to 375. Lightly grease large baking sheet. In medium size bowl, combine flour, oats, walnuts, cinnamon, baking soda, powder & salt. In large bowl w/electric mixer on medium beat sugar, egg whites, oil, apple butter & vanilla til blended. Reduce mixer speed to lo. Beat in flour mixture just until combined. Drop by TBSP dough about 1" apart onto greased sheet. Bake 8 minutes or until set but not browned. Cook on rack. While warm, store in airtight container.
