Ingredients
- Sift together:
- 2 cups flour, 2 t baking powder, 1 t cinnamon, 1 1/2 T salt, 2 cups sugar and 1 1/2 T baking soda.
- Add:1 cup vegetable oil and 4 eggs slightly beaten.
- Mix well then add and stir lightly:
- 8 1/2 oz. can crushed pineapple
- 2 cups grated carrots
- 1 cup chopped nuts
- Icing:
- Do not frost until cooled. Mix until smooth and creamy:
- 1 lb. or box powdered sugar,\1 cube butter
- 6 1/2 oz. cream cheese
- 1 t vanilla

Bake at 350 for 35-40 minutes.
Makes 3 layers.
