Ingredients

  • Sift together:
  • 2 cups flour, 2 t baking powder, 1 t cinnamon, 1 1/2 T salt, 2 cups sugar and 1 1/2 T baking soda.
  • Add:1 cup vegetable oil and 4 eggs slightly beaten.
  • Mix well then add and stir lightly:
  • 8 1/2 oz. can crushed pineapple
  • 2 cups grated carrots
  • 1 cup chopped nuts
  • Icing:
  • Do not frost until cooled. Mix until smooth and creamy:
  • 1 lb. or box powdered sugar,\1 cube butter
  • 6 1/2 oz. cream cheese
  • 1 t vanilla

Bake at 350 for 35-40 minutes.
