Ingredients

  • 1 1/2 lbs. lean beef chuck, cut into 1-inch cubes
  • 1 1/2 lbs. pork butt, cut into 1-inch cubes and trimmed of fat
  • 2 T olive oil
  • 2 cloves garlic, minced
  • 2 onions, diced
  • 1 (4 oz) can green chili peppers
  • 2 red bell peppers, chopped
  • 2 bay leaves
  • 1 t oregano
  • 1 t ground cumin
  • 1 t salt
  • 1 t black pepper
  • 1 can (14.5 oz) petite diced tomatoes
  • 1/4 cup lemon juice
  • 1/2 cup red wine
  • 1/2 cup beef stock or broth

Preparation

Step 1

Brown meats in a heavy skillet with olive oil until thoroughly cooked. Add garlic and onions. Saute until tender. Combine mixture with all remaining ingredients in a slow cooker. Cook on low for 8-10 hours. ARemove bay leaves before serving. If desired serve with warm tortillas. Refrigerate any leftovers.
