Ingredients
- 1 tablespoon salad oil
- 6 lbs. chicken pieces
- l large celery stalk, diced
- 1 medium onion, diced
- 1 cup ketchup
- 1/4 cup lemon juice (or orange juice)
- 3 tablespoons Worcestershire sauce
- 1/3 cup brown sugar
- 1 tablespoons prepared mustard
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground red pepper (optional)
Preparation
Step 1
In a 12-inch skillet, brown chicken pieces in hot oil.
Arrange browned chicken in a large open roasting pan, skin-side up.
Preheat oven to 400 degrees.
Discard all but 2 tablespoons fat and cook celery and onion until tender. Add ketchup and remaining ingredients to vegetables. Heat to boiling over high heat.
Pour sauce over chicken in roasting pan. Bake for 30 minutes or until juices run clear when chicken is pierced with a fork. Baste occasionally with sauce as it cooks.
