Mahi Mahi with Zesty Basil butter
- 3 T olive oil
- Mahi mahi filets
- 3 T unsalted butter
- 1 1/2 tsp lemon juice
- 1 large garlic, finely chopped
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 T fresh basil leaves
1. Combine the ingredients in saucepan and cook over low heat, stirring until butter melts. Cover and keep warm over low heat.
2. Heat the oil in skillet and cook fish for 3 min. then turn and cook until just opaque. Spoon the warm basil butter over fish and serve.
