Spinach and Pear Salad

Ingredients

  • Dressing:
  • 6 Tbsp. Riesling wine
  • 1/2 cup pear peeled and diced
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. shallots, chopped
  • 1 clove garlic
  • 1 tsp. dijon mustard
  • 1/2 cup olive oil
  • pinch of sugar
  • Salad:
  • Baby Spinach
  • 1 head of romaine lettuce
  • 1/4 cup crumbed blue cheese
  • 1/4 cup walnuts
  • 1-2 pears, cored and thinly sliced

Preparation

Step 1

1. Blend all of the dressing ingredients together in a blender except for the oil and sugar. Once combined, slowly add the oil. Then the sugar to taste. Blend well.

2. Toss together the spinach, romaine, blue cheese, walnuts and thinly sliced pear. Toss with dressing.
