Ingredients
- 1 cups almond flour
- 1 cup quinoa flour
- 1 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 cup smooth organic peanut butter
- 2/3 cup pure maple syrup
- 1/3 cup coconut oil
- 1 Tbsp pure vanilla extract
- 2 tsp maple extract
- 1 cup chopped roasted peanuts
Preparation
Step 1
Mix together flours, baking soda and salt in a medium bowl. In a large bowl, whisk together
peanut butter, maple syrup, coconut oil, and vanilla and maple extracts. Whisk the flour mixture into the
peanut butter mixture until well blended, and stir in the peanuts. Chill mixture until firm, about an hour in the
fridge. Preheat the oven to 350 degrees, and line a baking sheet with parchent. Roll the dough into 1 1/2
inch balls and place on the baking sheet. Flatten slightly with a fork and bake for 7-10 minutes until lightly
browned and set. Let cool completely.
