Ingredients
- 1 9 oz. chocolate wafers, crushed
- 1/2 c.. butter, melted
- 2 (16 oz.) cans pumpkin
- 1 1/2 c. sugar
- 4 beaten eggs
- 1/4 c. molasses
- 2 T. flour
- 2 t. ground ginger
- 2 t. ground cinnamon
- 1 t. salt
- 1 t. freshly grated nutmeg
- 1/2 t. freshly ground pepper
- 3 c. light cream
- Brandied Whipped Cream (see recipe)
- 1/4 c. finely chopped crystallized ginger
Preparation
Step 1
Preheat oven to 375. For crust, combine crushed chocolate wafers and 1/4 c. of the melted butter. Press mixture onto bottom and sides of 2 9" pie plates.
In a lg. bowl, combine remaining 1/4 c. melted butter, pumpkin, sugar, sugar, eggs, molasses, flour, ground ginger, cinnamon, salt, nutmeg, and pepper. Stir in light cream. Pour into prepared crusts. Bake for 1 hour and 10 minutes or until a knife inserted near the center comes out clean. Cool on wire racks. Spoon Brandied Whipped Cream onto pies. Top with Crystallized ginger. Cover and chill to store.
