Ingredients
- 30 oz canned chickpeas
- 7 oz roasted red peppers (packed in water), bottled, drained
- 3 medium garlic cloves
- 3 T canned tahini
- 1 T olive oil
- 6 T fresh lemon juice
- 1 t curry powder
- 1/2 t ground cumin
- 1/2 t ground coriander
- 1 1/4 t salt
- 1/2 t freshly ground pepper
Preparation
Step 1
Drain chickpeas, reserving 1/4 c liquid. Place chickpeas, reserved liquid and remaining ingredients in a food processor, process 2 minutes or until very smooth. Cover and chill 2 hours.
