ROASTED RED PEPPER HUMMUS 2

Ingredients

  • 30 oz canned chickpeas
  • 7 oz roasted red peppers (packed in water), bottled, drained
  • 3 medium garlic cloves
  • 3 T canned tahini
  • 1 T olive oil
  • 6 T fresh lemon juice
  • 1 t curry powder
  • 1/2 t ground cumin
  • 1/2 t ground coriander
  • 1 1/4 t salt
  • 1/2 t freshly ground pepper

Preparation

Step 1

Drain chickpeas, reserving 1/4 c liquid. Place chickpeas, reserved liquid and remaining ingredients in a food processor, process 2 minutes or until very smooth. Cover and chill 2 hours.
