Brussel Sprouts with Apples and Red Onions

Ingredients

  • 2 slices applewood-smoked bacon
  • 2 cups diced peeled Granny Smith apples
  • 1/2 cup thinly sliced red onion
  • 1 garlic clove, minced
  • 2 tbs water
  • 2 tbs cider vinegar
  • 3 cups thinly sliced Brussel Sprouts (about 1 pound)
  • 1 tsp stone-ground mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

Preparation

Step 1

Cook bacon in large nonstick skillet over medium heat until crisp; remove bacon from pan; crumble. Add apple, onion and garlic to drippings in pan; saute for 5 minutes or until lightly browned. Add 2 tbs water and vinegar to pan, scraping pan to loosen browned bits. Add brussel sprouts; cook 5 minutes or until tender, stirring frequently. Stir in mustard, salt and pepper. Remove from heat. Sprinkle with bacon and serve immediately.
