RED CURRY-LIME SKIRT STEAK

Ingredients

  • 4 t red curry paste
  • 4 t fresh lime juice
  • 4 t olive oil
  • 4 cloves garlic; peeled and finely minced
  • 1 pound skirt steak, cut into four equal portions

Preparation

Step 1

1. Combine red curry paste, lime juice, olive oil and garlic in a small bowl.

2. Place skirt steak in a dish or heavy zipper bay. Add marinade, making sure the meat is coated on both sides. Refrigerate for at least 2 hours and up to 12 hours.

3. To cook, heat grill on high. Remove steaks from marinade,. letting any excess marinade drip off.

4. Grill steak pieces, for 2-3 minutes per side for medium-rare to medium doneness. Remove steaks and let them rest 5 minutes.

5. To serve, thinly slice steaks on the diagonal, across the grain. Serve with extra lime wedges.
