Roasted Vegetables

Ingredients

  • 1 pie pumpkin (or baby carrots), peeled and chunked
  • 2 potatoes, unpeeled and chunked
  • 2 onions, peeled and wedged
  • 2 turnips, peeled and chunked
  • 2 beets, peeled, chunked and kept separate
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 Tbs brown sugar
  • 1 tsp cumin seeds
  • 2 cloves garlic, minced
  • salt and pepper to taste

Preparation

Step 1

Cut up all veggies, toss with oil mixture. Keep beets separate. Roast at 400 degrees for 25-35 minutes.
