Ingredients
- 1 pie pumpkin (or baby carrots), peeled and chunked
- 2 potatoes, unpeeled and chunked
- 2 onions, peeled and wedged
- 2 turnips, peeled and chunked
- 2 beets, peeled, chunked and kept separate
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 Tbs brown sugar
- 1 tsp cumin seeds
- 2 cloves garlic, minced
- salt and pepper to taste
Preparation
Step 1
Cut up all veggies, toss with oil mixture. Keep beets separate. Roast at 400 degrees for 25-35 minutes.
