Bacon and Blue Cheese Dinner Pies

Ingredients

  • 6 slices bacon
  • 1 8.5 oz. pkg. corn muffin mix
  • 2/3 cup flour
  • 1 t. chili powder
  • 1 egg, lightly beaten
  • 1/4 cup milk
  • 3 Granny Smith apples, cored and thinly sliced
  • 1/3 cup blue cheese crumbles

Preparation

Step 1

Preheat oven to 400 degrees. In a skillet, cook bacon until crisp. Drain; reserve 1 T. drippings. Chop bacon.
Meanwhile, in a bowl combine muffin mix, flour, chili powder, egg, and milk. Divide dough into four portions. Place two portions each on a greased baking sheet and press to 6" circles.
Top each circle with a layer of apple slices. Brush apples and crust with reserved bacon drippings.
Bake 10 minutes. Top with blue cheese and bacon; bake 5 to 7 minutes more until edges are golden and bottom of crust is set.
