New England Clam Chowder

Ingredients
- 3 slices bacon
- 1 cup diced peeled potatoes
- 1/2 cup chopped celery
- 1/4 cup chopped onions
- 3/4 tsp salt
- 1/8 tsp thyme
- ground pepper to taste
- 2- 6 oz cans clams-drained and reserving liquid
- 1/4 cup flour
- 3 cups milk

Step 1
In a large saucepan, cook bacon until crisp.
Remove bacon and set aside.
Add potatoes, celery, onion, salt, thyme, pepper and reserved clam liquid in bacon grease.
Bring to a boil then reduce heat and simmer 10 minutes.
In a medium sized jar, add flour to milk and shake until well blended. Gradually add to vegetable mixture and stir until thickened. Stir in clams and heat gently- do not boil.
Place in serving bowls and garnish with crumbled bacon.
