Ingredients
- 1 tbsp butter
- 2 large shallots, finely chopped
- 1 tbsp tomato paste
- 2 cups beef stock or broth
- 1 1/2 cup dry white wine
- 1 cup whipping cream
- 1 tbsp chopped fresh parsley
Preparation
Step 1
1. Melt 1 tbsp butter in heavy saucepan over medium-high heat.
2. Add shallots and sauté 2 minutes.
3. Add tomato paste, cook 1 minute.
4. Add stock and wine, boil until sauce is reduced to 1 cup, about 16 minutes.
5. Add cream and boil until sauce coats spoon, about 7 minutes. Set aside.
6. When steaks are cooked, add sauce to skillet and bring to boil, scraping up any browned bits.
7. Pour over steaks, sprinkle with parsley and serve.
