Cherry or Blueberry or Apple pie filling

Ingredients

  • for blueberry:
  • 6 qts berries
  • 6 c sugar
  • 2 1/2 c clear gel
  • 7 c water
  • 1/2 c lemon juice
  • 20 drops blue and 7 red of food coloring
  • for apple:
  • 7 drops yellow
  • 1 t cinnamon
  • for cherry:
  • 1/4 t red food coloring
  • 1 t cinnamon
  • 2 t almond extract

Preparation

Step 1

Warm fruit. In a seperate kettle, combine sugar, cleargel; stir; add water and color. Cook ovr medium heat till thick and bubbly. Add lemon and boil 1 min., stirring constantly. Fold in drained fruit and immediately fill prepared jars leaving 1 in. headspace. Adjust lids and process.
Low alt. 30 minutes, hot water bath.
