Ingredients

  • 1 ½ cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup softened butter
  • 1 cup sugar
  • ¼ cup light sour cream
  • 1 large egg
  • 2 cups sweetened flaked coconut (toasted golden)
  • 1 cup packed, dried apricots (cut up)
  • 1 cup dried cranberries

Step 1




Mix dry ingredients together. In separate bowl, beat butter and sugar until light and fluffy. Add flour mixture, sour cream and egg. Mix well. Sit in coconut, apricots and cranberries. Halve dough. On a sheet of waxed paper, form each half into a 10” log. Wrap in waxed paper and chill 4 hours. Spray baking sheet and cut logs into 1/3” slices. Bake at 350 for 10 minutes. (Toast coconut under broiler and watch carefully.)
