Spinach and Prosciutto Side Dish

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 package frozen chopped spinach, (10 oz.) thawed and sqeezed dry
  • 4 ounces thinly sliced Prosciutto, chopped
  • 1 jar roasted red peppers, (4 oz.) drained and chopped
  • 1 jar artichoke hearts, (6.5 oz.) drained and sliced
  • 1 tbsp garlic powder

Preparation

Step 1

1. Over medium heat in a large skillet heat the oil.

2. Add the artichoke hearts, spinach, red peppers and prosciutto.

3. Season with the garlic powder.

4. Cook 15 min., constantly stirring until heated through.
