Ingredients
- 2 1/2 cups all purpose flour
- 2 cup sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup vegitable oil
- 1-2 cups raisins (the original recipe calls for 2 cups chopped apples...the raisins taste much better!)
- optional finely chopped pecans. approx 1/2 cup.

Step 1
In a large bowl combine the first 7 ingrediants. In a small bowl combine the eggs, pumpkin and oil. Stir into dry ingrediants until moistened. Fold in raisins (or apples if you are using them). Fill greased muffin cups two thirds full. Bake at 350 for 30-35 min. during the last 5 min of baking add the pecans on top if you wish.
cool muffins 10 minutes before removing from pan.
